Zucchini And Yellow Pepper Sandwich
|French bread slices||6|
|Zucchini||1⁄2 , thinly sliced|
|Stuffed green olives||8 , sliced|
|Oil||2 Teaspoon (Preferable Olive)|
|To be mixed into a topping:|
|Eggless mayonnaise||6 Teaspoon|
|Finely chopped parsley||1 Teaspoon|
|Freshly ground pepper||To Taste|
1 In a pan, heat 1 teaspoon of olive oil.
2 Add the zucchini slices and salt and saute for 2 minutes.
3 Keep aside.
4 In the same pan, heat the remaining olive oil.
5 Cook the yellow capsicum, skin side down, until the skin blisters.
6 Let cool and peel off the skin.
7 Cut into thick slices.
8 Keep aside.
9 In a bowl, combine all the topping ingredients together and mix well.
10 Spread the French bread slices generously with the mixture.
11 Top each bread slice with the zucchini, yellow capsicum slices and olives.
12 Spoon a little of the topping mixture on top.
13 Serve immediately.
