Trim bottom crust from loaf; slice loaf lengthwise into 1/3 inch (8 mm) thick slices.
Trim remaining crusts.
With rolling pin, gently flatten bread slices and spread with butter (if using); spread with filling.
Roll up jelly roll style, starting at narrow end.
Cover and refrigerate until ready to serve.
Cut into 6 or 8 slices.
To SERVE: Place assorted sandwiches around rim of circular plate in wreath shape or arrange attractively to fill entire plate.
Decorate with evergreen sprigs, radish roses or carved vegetables.
FILLINGS Christmas Pinwheels: Combine 4 oz (125 g) softened cream cheese with 1 tbsp (15 mL) maraschino cherry juice.
Spread thin layer on bread slice.
Place row of whole maraschino or stir chopped maraschino roll up.
Banana Pinwheels: Spread or crunchy peanut butter.
