Whole-Grain Veggie Sandwiches
|Non fat cottage cheese||3⁄4 Cup (12 tbs)|
|Dijon mustard||2 Tablespoon|
|Plain non fat yogurt||3⁄4 Cup (12 tbs)|
|Prepared horseradish||1 Teaspoon|
|Grated carrot||1⁄4 Cup (4 tbs)|
|Whole grain french rolls||4|
|Grated green bell pepper||1⁄4 Cup (4 tbs)|
|Spinach leaves||2 , fresh ones|
|Grated celery||1⁄4 Cup (4 tbs)|
|Tomato slices||4 , fresh ones|
|Minced scallion||1 Teaspoon|
1. Place cottage cheese and yogurt in a blender or food processor and process until smooth.
2. Combine cottage cheese-yogurt mixture, carrot, green pepper, celery, and scallion.
3. Combine mustard with horseradish. Cut rolls in half lengthwise. Spread mustard-horseradish mixture on bottom of rolls.
4. Place spinach leaves on top of mustard. Place tomatoes on top of spinach leaves.
5.Spread cheese-yogurt mixture on top halves of rolls. Place bottom halves of rolls on tops.
