  Non fat cottage cheese 3⁄4 Cup (12 tbs)
  Dijon mustard 2 Tablespoon
  Plain non fat yogurt 3⁄4 Cup (12 tbs)
  Prepared horseradish 1 Teaspoon
  Grated carrot 1⁄4 Cup (4 tbs)
  Whole grain french rolls 4
  Grated green bell pepper 1⁄4 Cup (4 tbs)
  Spinach leaves 2 , fresh ones
  Grated celery 1⁄4 Cup (4 tbs)
  Tomato slices 4 , fresh ones
  Minced scallion 1 Teaspoon

1. Place cottage cheese and yogurt in a blender or food processor and process until smooth.
2. Combine cottage cheese-yogurt mixture, carrot, green pepper, celery, and scallion.
3. Combine mustard with horseradish. Cut rolls in half lengthwise. Spread mustard-horseradish mixture on bottom of rolls.
4. Place spinach leaves on top of mustard. Place tomatoes on top of spinach leaves.
5.Spread cheese-yogurt mixture on top halves of rolls. Place bottom halves of rolls on tops.
