Super Quick Bean Sandwich
|Canned baked beans||1 Cup (16 tbs)|
|Nonfat cottage cheese||2 Tablespoon|
|Non fat whole grain bread slice/2 nonfat whole-grain bagels, split in half||4|
|Ground paprika||1⁄4 Teaspoon|
1. Mash the beans slightly and spread on the bread or bagel half.
2. Top each open-faced sandwich with 1/2 tablespoon cottage cheese.
Sprinkle with paprika.
3.Place the bean sandwiches under the broiler until they are warm and slightly brown.
Variation - Delete the cottage cheese. Sprinkle the beans with minced garlic, chili powder, and chopped scallions.
