Combine eggs, pork luncheon meat, cheese, mayonnaise or salad dressing, pickle relish and mustard in medium-size bowl; toss lightly to mix.
(If made ahead, chill until serving time.)
Line buttered rolls with lettuce; fill with salad mixture, dividing evenly.
Garnish with stuffed green olives and radishes threaded onto wooden picks, kebab style.
