Vegetable Grilled Sandwich

The grilled vegetable sandwich can be served as a full meal. Prepared with a stuffing of shredded cabbage, carrots, cottage cheese and mozarella along with green chilies for heat, served between whole wheat bread slices, the vegetable grilled sandwich is grilled and served hot.This is a special low sugar recipe great for diabetics as well as for people on low carb diet. Adapted from the Lantus book of recipes.
Ingredients
  Whole wheat bread slice 8
  Shredded cabbage 3⁄4 Cup (12 tbs)
  Thickly grated carrots 3⁄4 Cup (12 tbs), grated
  Low fat paneer 3⁄4 Cup (12 tbs), grated
  Coriander 2 Tablespoon, chopped
  Green chili 1 , chopped
  Mozzarella cheese 2 Tablespoon
  Salt To Taste
  Low fat butter 2 Teaspoon
Directions

For the stuffing Mix all the ingredients together.
Divide the stuffing into 4 equal portions.
How to proceed Place one portion of the stuffing on one slice of bread.
Top with another slice of bread.
Repeat with the remaining ingredients to make 3 more sandwiches.
Pre heat the griller and grill the sandwiches, using a little low fat butter.
Serve hot.
