Croque-Monsieur

Ingredients
  White bread slices 12
  Finely grated gruyere cheese 3 Cup (48 tbs)
  Dijon mustard 2 Teaspoon
  Heavy cream 1⁄2 Cup (8 tbs)
  Cooked ham slices 6
  Melted butter 1⁄2 Cup (8 tbs)
Directions

Heat oven to 400 degrees.
Have ready a large cookie sheet.
Cut crusts from bread.
Combine cheese, mustard and enough of the cream to make the mixture almost paste-like but not wet.
Mix and mash thoroughly with a fork while you are adding cream.
Spread this cheese mixture thickly on all slices of bread.
Put the slices of bread together, sandwich-style, with cheese inside and a slice of ham between.
Brush outsides of sandwiches generously with melted butter and put them on cookie sheet.
Bake 10 minutes then turn and bake about 5 minutes more or until cheese is soft and bread is golden.
Let stand 2 or 3 minutes then cut each sandwich into quarters.
Serve immediately.
