Betty's Grilled Pimento Cheddar Cheese and Tomato Sandwich

In this video, Betty demonstrates how to make Grilled Pimiento Cheddar Cheese and Tomato Sandwiches. These sandwiches have two kinds of cheddar cheese, some mayo, sour cream, and other ingredients to make them a favorite lunchtime snack.

Ingredients

For filling
Diced pimiento 4 Ounce , drained
Mayonnaise 1/2 Cup (8 tbs)
Sour cream 1/2 Cup (8 tbs)
Finely chopped onion 1 Teaspoon
Worcestershire sauce 1 Teaspoon
Ground red cayenne pepper 1/4 Teaspoon
Sharp cheddar cheese 8 Ounce , finely shredded
White cheddar cheese 8 Ounce , finely shredded
Snipped chives 1/4 Cup (4 tbs)
Other ingredients for sandwich
Whole wheat bread slice/White bread slice 8
Tomatoes 2 Medium , sliced
Softened butter 2 Tablespoon (as needed)

Directions

MAKING

1. In a bowl, add diced pimiento, mayonnaise, sour cream, onion, Worcestershire sauce, ground red pepper, sharp cheddar, white cheddar cheese, and chives. Stir to combine.

2. Spread a bread slice with 1/3 cup of pimiento cheese mixture. Place 2 tomato slices on top and cover with another bread slice.

3. Trim the edges and spread one of the outer sides with softened butter.

4. Place sandwich, buttered side down, on a hot griddle or iron skillet. Butter the top side and grill until browned on both side. Repeat the process to make more sandwiches.

SERVING

6. Remove sandwich from griddle or skillet, cut diagonally and serve immediately.
