Big Island Beef Pastrami Reuben Sandwich

Ingredients
  Pastrami beef slices 1 Cup (16 tbs) (brined and smoked)
  Marbled rye bread slices 2 Large
  Bacon fat 1 Teaspoon
  Salt 1⁄4 Teaspoon (To taste)
  Black pepper 1⁄2 Teaspoon (To taste)
  Sauerkraut 1 Tablespoon (made with cabbage, bacon, potato and beef broth)
  Swiss cheese slice 2
  Russian dressing 2 Teaspoon
Directions

GETTING READY
1.Pre heat the oven to 350 degrees Farenheit.

MAKING
2.Lightly toast the bread slices.
3.Heat a sauté pan and pour the bacon fat in it.
4.Drop the pastrami beef and saute it for couple of minutes.
5.Season with salt and pepper to taste. Bring the meat together in the center of the pan almost in the shape of the sandwich.
6.Add the sauerkraut on top of the beef.
7.Top with the cheese slices.
8.Place the pan in the oven just long enough to melt the cheese.
9.On a plate, place the toasted bread slices and smear them with the Russian dressing.
10.Place the beef with the sauerkraut and melted cheese on a bread slice. Top with the other.

SERVING
11.Cut the sandwich diagonally and plate it with French fries.
