Vegetable Sandwich

This three layer vegetable sandwich recipe is made from fresh vegetables and served on wholesome multigrain bread with cream cheese. This quick vegetarian sandwich recipe can be served cold or slightly warm and makes a great meal or evening snack.

Ingredients

Iceberg lettuce/Any lettuce of your choice. 4
Yellow bell pepper 1
Cucumber 1
Tomato 1 Medium
Boiled potato 1 Medium
Salt 1/4 Teaspoon
Black pepper 1/4 Teaspoon
Dried basil To Taste
Low fat cream cheese/Low fat mayonnaise 2 Tablespoon
English mustard 1 Teaspoon
Multi grain brown bread slice 3

Directions

Wash and thinly slice the bell pepper,cucumber and tomato.

Remove the sides of the breads and spread the cream cheese or mayonnaise and mustard on them.

Take one slice and arrange lettuce leaf, then the tomato and cucumber slices. Season with salt, pepper and dried basil.

Place another slice of bread on top, buttered side down and apply cream cheese, arrange a layer of potato, tomato and bell pepper and spinkle salt, pepper and dried basil over it.

Put third slice of bread over it and press lightly.

Slightly warm the sandwich for 2 minutes without letting it get toasted.

Divide the sandwich in half and then again half of one of the halves and serve with a macaroni salad and tomato ketchup.
