Hot Asian Eggplant and Seitan Sandwich

  Almond oil/Extra virgin olive oil 2 Tablespoon
  Toasted sesame oil 2 Teaspoon (Japanese Variety, Divided)
  Hoisin sauce 1⁄4 Cup (4 tbs)
  Dark agave nectar 1 Tablespoon
  Seitan 8 Ounce, sliced 1/2 -inch thick
  Sourdough bread slices 4 Large
  Eggplant 1 Medium
  Extra-virgin olive oil/Almond oil 2 Tablespoon
  Toasted sesame oil 2 Teaspoon, divided (Jasmine)
  Sea salt 1⁄4 Teaspoon
  Tomato puree 1 Cup (16 tbs)
  Hoi-sin sauce 1⁄4 Cup (4 tbs)
  Agave nectar 1 Tablespoon (Dark Ones)
  Seitan 8 Ounce, sliced 0.50 inch thick
  Sourdough bread 4 Large
  Scallions 8 , thinly sliced
  Sesame seeds 1 Tablespoon

1. Preheat the oven to 450 degrees F.
2. Place a baking pan on the middle rack.
3. Heat a stove top grill over high heat.

4. Cut a strip off either side of the eggplant to expose the flesh.
5. Cut into 4 thick slices parallel to the cut sides.
6. Combine the almond or olive oil with 1 teaspoon of the toasted sesame oil in a small bowl.
7. Brush the eggplant slices very lightly with about half the oil, and spread them out on a plate or tray. 8. Sprinkle the slices on both sides with the salt, and then place them on the grill.
9. Cook for about 5 minutes on each side, and then place the slices in the baking pan in the oven.
10. Keep the grill hot.
11. Combine the tomato puree, hoisin sauce, agave nectar and the remaining toasted sesame oil in a small saucepan over medium heat.
12. Toss the seitan slices with the remaining oil and place them on the grill.
13. Cook for about 3 minutes on each side, and then add to the sauce.
14. Stir well and then lower the heat to keep the sauce and seitan hot, but not bubbling.
15. Toast the bread slices and place one on each plate.
16. Remove the eggplant from the oven and place one slice on each piece of toast.
17. Divide the hot seitan and sauce among the 4 slices, covering nicely.
18. Sprinkle with the scallions and sesame seeds.

19. Serve at once.
