Pulled Pork Sandwiches

MAKING
1) Trim off all the fat from the pork
2) Make a simple rub, in a bowl mix together brown sugar, salt, paprika and chili powder
3) Coat the pork shoulder well
4) Rest the pork for an hour in the refrigerator
5) To make the sauce – in a small pot, mix together the apple cider, tomato ketchup, brown sugar, Worcestershire sauce, red pepper flakes, salt, hot sauce
6) Place the sauce pot over the grill to heat lightly for about 10 minutes
7) Once it simmers, take it off the heat and keep aside
8) Now place the marinated pork on the hot grill
9) Cover the grill and cook for at least 2 hours
10) Take off the cover and spray some moisture which is some apple juice so as to keep the meat moist
11) Keep the cover back on and continue to grill for two hours more
12) Once the pork is cooked, take it off the grill
13) Wrap the pork in aluminum foil and allow to rest for about an hour
14) Using a fork pull the meat out
15) Pour some over the pulled pork along with some pork drippings and mix well
16) Pile the meat over some bread rolls

SERVING
17) Serve the sandwiches with some coleslaw and some more sauce
