Caramelized Onions Lox And Egg Sandwich

Ingredients
  Unsalted butter 4 Teaspoon, divided
  Onion 1 Large, sliced
  Eggs 8 Large
  Heavy cream 2 Tablespoon
  Lox 4 Ounce, cut into bite size pieces
  Low carb plain bagels 4 , toasted
  Chopped chives 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

1. Melt 2 teaspoons of the butter in a large nonstick skillet over medium heat. Add onion and cook, stirring frequently, until golden brown, 8 to 10 minutes. Transfer to a plate.
2. Meanwhile, lightly beat eggs and cream in a bowl until just combined. Reduce heat to medium-low and add remaining 2 teaspoons butter to skillet. When foam subsides, pour in egg mixture. Season with a pinch of salt and a bigger pinch of pepper (the lox will add saltiness) and cook, stirring constantly, until eggs are almost set, 4 to 5 minutes.
3. Add onion and lox to eggs and continue cooking until eggs are set and lox is heated through. Set bagel halves on plates and top with eggs; sprinkle with chives, if desired.
