Jam Sandwich Cookies

Ingredients
  Butter 1⁄2 Cup (8 tbs)
  Packed brown sugar 1⁄2 Cup (8 tbs)
  Honey 1⁄4 Cup (4 tbs)
  Egg 1
  Vanilla 1⁄2 Teaspoon
  All purpose flour 1 3⁄4 Cup (28 tbs)
  Baking soda 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Raspberry jam/Other jam 2 Tablespoon (Adjust Quantity As Needed)
Directions

Cream together butter, brown sugar and honey.
Beat in egg and vanilla.
Combine flour, baking soda and salt.
Blend flour mixture into creamed mixture.
Chill dough for 30 minutes.
Shape dough into small balls (about 1-inch in diameter).
Place on lightly-greased baking sheets.
Flatten balls slightly with bottom of glass dipped in flour.
Bake at 350 degrees for 8 to 10 minutes or until golden.
Cool on baking sheet for few minutes; remove to wire racks to cool completely.
When cool, put together in pairs filled with jam.
If desired, squeeze filled cookies slightly until jam is visible on edges.
Roll edges in coconut.
Especially pretty with red jam and coconut.
