Avocado Pineapple Tea Sandwiches
|Avocado||1 Medium, mashed|
|Lemon juice||2 Teaspoon|
|Drained crushed pineapple||1⁄4 Cup (4 tbs)|
|Whole wheat bread slices||16|
|Green pepper pieces||16 Small|
1. Prepare a mixture of mashed avocado, pineapple, mayonnaise and lemon juice.
2. Take a cardboard and shape into a leaf. Using two bread slices, shape two leaves. Spread avocado mixture on the bread slices and using blunt toothpick, demark the leaf veins. Pop in a small green pepper piece to make the stem.
3. Serve immediately.
