Low Fat Crepes
|All purpose flour||1⁄2 Cup (8 tbs)|
|Whole wheat flour||1⁄2 Cup (8 tbs)|
|Skim milk||1 1⁄2 Cup (24 tbs)|
|Nonstick spray coating||1|
Combine all-purpose flour and whole wheat flour, then add milk, egg, and egg white.
Beat with a rotary beater till blended.
Spray a 6-inch skillet with nonstick coating, then heat the skillet.
Remove from heat and spoon in about 2 tablespoons batter.
Lift and tilt skillet to spread batter.
Return to heat and brown on one side only.
Invert pan over paper towels to remove crepe.
Repeat to make about 18 crepes, lightly greasing skillet occasionally. (Don't spray hot skillet with nonstick coating.)
