Sportsman Sandwich Bacon Lettuce And Tomato Sandwich
|Back bacon rashers||8|
|Lettuce leaves||4 , washed|
|Tomatoes||4 Medium, washed and thinly sliced|
Using scissors, remove the rind from the bacon.
Grill for 2-3 minutes on each side until crisp.
Toast each side of the bread.
Put the toast on to a board and spread one side of each slice with mayonnaise.
Arrange two rashers of bacon on 1 slice.
Repeat with one other slice of toast.
Cover each with a lettuce leaf and a few slices of tomato.
Season with salt and pepper.
Cover with another slice of toast and add the remaining bacon, lettuce and tomatoes.
Season and top with the last slice of toast (mayonnaise-side down!).
Lightly press down the sandwiches and using a bread knife, cut each one in half diagonally.
