Stacked Shrimp Sandwich
|Frozen cooked shrimp||1 Ounce (1/3 Cup)|
|Reduced calorie mayonnaise/Salad dressing||2 Teaspoon|
|Dijon-style mustard||1 Teaspoon|
|Mixed grain bread slice||2|
|Swiss cheese slice||1 3⁄4 Ounce|
|Thin cucumber slices||4|
|Alfalfa sprouts||1⁄4 Cup (4 tbs)|
Place frozen shrimp in a colander.
Run hot water over shrimp just till thawed.
Meanwhile, in a small mixing bowl stir together mayonnaise or salad dressing and mustard.
Stir in drained shrimp.
On one slice of bread layer cheese, shrimp mixture, cucumber, tomato, and alfalfa sprouts.
Top with second slice of bread.
