Dijon Tofu Sandwiches
|Tofu||16 Ounce, well drained (1 Package)|
|Shredded monterey jack cheese||1 Ounce (1/4 Cup)|
|Reduced calorie mayonnaise/Salad dressing||2 Tablespoon|
|Dijon style mustard||4 Teaspoon|
|Garlic salt||1 Teaspoon|
|Bagels/English muffins||4 , split and toasted|
|Tomato||1 Medium, thinly sliced|
|Alfalfa sprouts||1 Cup (16 tbs)|
In a medium mixing bowl use a fork to mash tofu. Stir in cheese, mayonnaise or salad dressing, mustard, and garlic salt; mix well. Spread tofu mixture on each bagel or English muffin half. Place on a baking sheet.
Broil 4 to 5 inches from the heat about 4 minutes or till light brown. Top with tomato and alfalfa sprouts.
