Betty's Brunch Deluxe
|Frozen hash brown potatoes||12 Ounce (1 Package)|
|Whipping cream||1⁄3 Cup (5.33 tbs)|
|Shredded cheddar cheese||1 Cup (16 tbs)|
|Cubed fully cooked ham/Cubed canadian bacon||1 Cup (16 tbs) (1/4-Inch Cubes)|
|Freeze dried chives||2 Teaspoon|
Place potatoes in 9-inch square baking dish.
Cover with plastic wrap.
Microwave at High for 5 to 7 minutes, or until potatoes are hot, stirring after every 2 minutes to break apart.
In medium mixing bowl, blend eggs and whipping cream.
Stir in cheese, ham, chives, salt and pepper.
Pour over potatoes.
Cover with wax paper.
Reduce power to 50% (Medium).
Microwave for 17 to 28 minutes, or until egg mixture is set, stirring after every 5 minutes.
