Jim Ackland's Grilled Cheese Sandwiches

Ingredients
  Sourdough bread/Cracked wheat /rye bread 8 , sliced
  Butter stick 1 (softened)
  Coarse mustard/Horseradish mustard 1 Tablespoon
  Grated cheese/Or a combination 2 Cup (32 tbs) (such as cheddar, Monterey jack, Swiss, Gouda)
  Ham slice/Turkey slices 4
  Roasted green chilies 1⁄4 Cup (4 tbs), chopped (canned)
  Thin tomato slices 4 , cut in half
  Roasted red pepper strips 8 (1 inch wide)
  Sauteed onion 1⁄2 Cup (8 tbs) (about 1 small)
  Sauteed mushrooms 1⁄4 Cup (4 tbs)
Directions

1. Heat a cast-iron skillet or griddle over a low flame. Butter one side of bread. Spread choice of mustard, horseradish, or other condiments on the other side. Layer on the cheese, ham, roasted chilies, tomato, roasted red pepper, onion, and mushrooms, then top with another slice of bread, buttered side out.
2. Lay 2 sandwiches at a time into the skillet, starting with the cheese side, and cook slowly until very crisp and golden brown, pressing occasionally with a spatula and turning only once. Allow to rest 5 minutes before cutting
