Toasted Spinach Sandwiches
|Frozen chopped spinach||10 Ounce, thawed and drained (1 Package)|
|Finely chopped celery||1⁄2 Cup (8 tbs)|
|Minced green onions||1⁄4 Cup (4 tbs)|
|Fat free salad dressing||1⁄4 Cup (4 tbs) (Commercial Spoon Able)|
|Plain non-fat yogurt||1⁄4 Cup (4 tbs)|
|Hot sauce||1⁄2 Teaspoon|
|Fennel seeds||1⁄2 Teaspoon, crushed|
|Garlic powder||1⁄2 Teaspoon|
|Low calorie white bread slices||6 (8 Slices, 3/4 Ounce Each)|
|Finely shredded reduced fat havarti cheese||1 Ounce (1/4 Cup)|
|Butter flavored vegetable cooking spray||1|
Press spinach between paper towels until barely moist.
Combine spinach and next 7 ingredients in a medium bowl; stir well.
Spread spinach mixture evenly over 4 slices of bread; sprinkle evenly with cheese, and top with remaining 4 bread slices.
Transfer sandwiches to a sandwich press or hot griddle coated with cooking spray.
Cook until bread is lightly browned and cheese melts.
