Picnic Sandwich Box
|Crusty bloomer loaf||1 Small, uncut|
|Butter||3 Ounce, melted|
|Pork sausage meat||8 Ounce|
|Cooked ham||4 Ounce, diced|
|Cooked tongue||4 Ounce, diced|
|Onion||2 Ounce, peeled and chopped|
|Freshly ground black pepper||To Taste|
|Eggs||2 , hard boiled and halved|
Cut horizontally across the loaf, two-thirds of the way up, and remove this 'lid'. Gently ease away the bread from around the edge of the crust. Make 100 g (4 oz) breadcrumbs from the bread. Brush the cavity of the loaf and the lid with some of the melted butter.
Combine the sausage meat, chopped meats, breadcrumbs and onion. Beat the two eggs and milk together. Season well. Combine with the meat mixture. Place one third of the filling in the bread case and arrange the halved hard-boiled eggs lengthways on top. Pack around with the remaining filling, then top with the bread lid.
Secure the loaf in a parcel-like fashion with string. Use the remaining melted butter to brush all over the loaf. Place on a baking sheet. Bake in a preheated moderately hot oven (200°C/400°F, Gas Mark 6) for 15 minutes. Cover with foil and continue baking for 45 minutes. When cool, remove the string. Wrap in foil for carrying to the picnic. Cut in thick slices to serve.
