Grilled Mozzarella Chicken Sandwiches

Ingredients
  Light mayonnaise 2 Tablespoon
  Sweet pickle relish 4 Teaspoon
  Whole grain bread 9 1⁄2 Ounce (8 Slices, 1.2 Ounce Each)
  Roasted boneless skinless chicken breast 5 Ounce, thinly sliced (1 Package)
  Part skim mozzarella cheese 2 1⁄2 Ounce (4 Slices, 0.7 Ounce Each)
  Arugula/Spinach 2 Cup (32 tbs), trimmed
Directions

1. Combine mayonnaise and relish; spread evenly over 4 bread slices. Top evenly with chicken, cheese, and arugula. Top with remaining bread slices. Coat both sides of sandwiches with cooking spray.
2. Place a nonstick skillet coated with cooking spray over medium-high heat. Add 2 sandwiches to pan; cook 2 to 3 minutes on each side or until lightly browned. Repeat with remaining sandwiches.
