Grilled Mozzarella Chicken Sandwiches
|Light mayonnaise||2 Tablespoon|
|Sweet pickle relish||4 Teaspoon|
|Whole grain bread||9 1⁄2 Ounce (8 Slices, 1.2 Ounce Each)|
|Roasted boneless skinless chicken breast||5 Ounce, thinly sliced (1 Package)|
|Part skim mozzarella cheese||2 1⁄2 Ounce (4 Slices, 0.7 Ounce Each)|
|Arugula/Spinach||2 Cup (32 tbs), trimmed|
1. Combine mayonnaise and relish; spread evenly over 4 bread slices. Top evenly with chicken, cheese, and arugula. Top with remaining bread slices. Coat both sides of sandwiches with cooking spray.
2. Place a nonstick skillet coated with cooking spray over medium-high heat. Add 2 sandwiches to pan; cook 2 to 3 minutes on each side or until lightly browned. Repeat with remaining sandwiches.
