Garden Cheese Sandwiches

Ingredients
  Cottage cheese 100 Gram
  Finely chopped green chilies 1 Teaspoon
  Finely chopped capsicum 1 Teaspoon
  Cucumber/Carrot 1 Cup (16 tbs), grated
  Coriander leaves 1 Tablespoon, finely chopped
  Bread slices 8
  Salt To Taste
  Pepper To Taste
  Mayonnaise 1⁄4 Cup (4 tbs)
  Butter 1 Tablespoon
Directions

Add salt and pepper to butter and apply it on one side of the sliced bread.
Lightly squeeze the grated vegetables to remove extra water.
In a bowl, combine grated vegetables and rest of the ingredients to make soft mixture.
Spread this mixture equally on four buttered slices of bread.
Sandwich with remaining buttered slices of bread.
Press gently.
Cover with a damp towel, and keep in refrigerator for atleast one hour.
Remove crusts from sandwiches and cut into desired shapes.
