Ginger Snap Sandwiches
|Low fat cottage cheese||1⁄2 Cup (8 tbs)|
|Granulated white sugar||2 Tablespoon|
In food processor or with grater, shred apple; set aside.
In food processor or blender, puree cottage cheese until smooth.
Blend in shredded apple and sugar.
With rubber spatula, spread apple mixture onto flat side of ginger snap, topping with another ginger snap to make a sandwich.
