Beef And Tomato Sandwich
|Thinly sliced smoked beef||1 1⁄2 Ounce, torn into bite size pieces (1/2 Of A 3 Ounce Package)|
|Tomato||1⁄2 Small, seeded and chopped|
|Shredded cheddar cheese||2 Tablespoon|
|Whole wheat bread slices/1/2 of an 8 inch pita bread round||2|
|Shredded lettuce||1⁄4 Cup (4 tbs)|
Up to 6 hours before mealtime, in a clear plastic bag combine beef, tomato, and cheese; seal.
In 2 separate clear plastic bags place the bread slices or pita half and the lettuce; seal.
Pack meat mixture, bread, lettuce, and a paper towel to take along in an insulated lunch box with an ice pack.
At mealtime, if using whole wheat bread, place 2 bread halves on the paper towel.
Place the meat mixture atop the bread or, if using the pita half, place meat mixture in pita half and place on the paper towel.
Micro-cook, uncovered, on 100% power (HIGH) for 30 seconds to 1 minute or till meat mixture is heated through.
Top with lettuce.
Top with the remaining bread halves, if using whole wheat bread.
