Monterey Fiesta Sandwich

  Ripe avocado 1⁄2 Small
  Finely chopped green onion 2 Tablespoon
  Dairy sour cream 1 Tablespoon
  Garlic salt 1⁄2 Teaspoon
  Liquid red pepper seasoning 4 Drop
  Thin corn toaster muffins 2
  Butter/Margarine 1 Tablespoon
  Monterey jack cheese slice 2 , quartered
  Sliced tomato 2 Tablespoon

1 Mash half a small ripe avocado ( 1/2 cup).
2 Add 2 tablespoons finely chopped green onion, 1 tablespoon dairy sour cream, 1/4 tea spoon garlic salt and a few drops liquid red pepper seasoning.
3 Toast 2 thin corn toaster muffins; butter bottom.
4 Cut 2 slices Monterey jack cheese into 8 equal pieces. Place 2 pieces cheese, a thin slice tomato, remaining cheese and another slice tomato on each muffin.
5 Spoon guacamole mixture over tomato; top with additional chopped green onion and diced tomato.
6 Garnish with lime wedge and parsley, if you wish.
