Open Faced Beef Sandwiches

Ingredients
  Non-fat sour cream 1⁄2 Cup (8 tbs)
  Unsweetened applesauce 1⁄4 Cup (4 tbs)
  Prepared horseradish 2 Tablespoon
  Cracked pepper 1⁄2 Teaspoon
  Low calorie whole wheat bread slice 3 Ounce (4 Slices, 3/4 Ounce Each)
  Shredded spinach 1 Cup (16 tbs)
  Canned sliced beets 1 Cup (16 tbs), drained
  Cooked beef roast slices 1⁄2 Pound (Thinly Sliced)
  Minced chives 2 Tablespoon
Directions

Combine first 4 ingredients in a small bowl; stir well.
Spread 1 tablespoon sour cream mixture over each slice of bread; top each with 1/4 cup spinach and 1/4 cup beets.
Arrange roast beef evenly over beets; sprinkle with chives.
Spoon 2 tablespoons sour cream mixture over each sandwich.
