Tofu Sandwich

Ingredients
  Firm tofu 2 Ounce
  Reduced calorie mayonnaise 2 Teaspoon
  Minced onion 2 Teaspoon
  Diced green bell pepper 2 Teaspoon
  Pickle relish 1 Teaspoon
  Low calorie wheat bread slice/Rye bread slice 2
  Alfalfa sprouts 1⁄4 Cup (4 tbs)
Directions

1. In small bowl, mash tofu with fork. Add mayonnaise, onion, bell pepper, and pickle relish; stir well to combine.
2. Spread tofu mixture on 1 slice of bread; top with sprouts and remaining slice of bread.
