Tomato Rarebit Sandwich
|Garlic||1 Clove (5 gm), chopped|
|Dijon mustard||1 Teaspoon|
|Milk||1 1⁄2 Cup (24 tbs)|
|Shredded sharp cheddar cheese||2 Cup (32 tbs)|
|Egg||1 , beaten|
|Cooked bacon slices||6|
|Fresh pepper||To Taste|
In saucepan, melt butter; blend in flour, garlic, and mustard.
Gradually stir in milk.
Cook, stirring constantly, until thickened.
Add cheese and stir until it melts.
Pour a small amount over egg; blend well.
Return to pan and cook about 1 minute.
In individual serving dishes, place 1 slice toast; top with 1 slice tomato.
Top with about 1/3 cup cheese mixture and 1 slice bacon, cut in half.
