Hot Smoked Turkey Sandwich
|Mayonnaise||1⁄4 Cup (4 tbs)|
|Dijon mustard||2 Teaspoon|
|Chopped parsley||2 Tablespoon|
|Rye bread slices||2|
|Pumpernickel bread slices||2|
|Smoked turkey||1⁄2 Pound, sliced|
|Swiss cheese||1⁄4 Pound, sliced|
1 Preheat the broiler. Line a broiler pan with foil.
2 In a small bowl, combine the mayonnaise, mustard, parsley (if using), oregano, tarragon and pepper.
3 Thinly slice the tomatoes.
4 Place the bread on the broiler pan. Spread each slice with herbed mayonnaise. Dividing evenly, place the sliced turkey on the bread. Top with tomato slices and then with Swiss cheese.
5 Broil the sandwiches 4 inches from the heat for 3 to 5 minutes, or until the cheese is melted and bubbly.
