Hearty Rueben Salad
|Iceberg lettuce||4 Cup (64 tbs)|
|Canned sauerkraut||16 Ounce, drained, rinsed (1 Can)|
|Swiss cheese||1 Cup (16 tbs), cubed|
|Corned beef||5 Ounce, chopped (2 Packages)|
|Chopped parsley||2 Tablespoon|
|Thousand island salad dressing||1⁄2 Cup (8 tbs)|
|Rye croutons||1⁄2 Cup (8 tbs)|
|Hard cooked eggs||4 , quartered|
In a large salad bowl or shallow platter, toss lettuce, sauerkraut, cheese, corned beef and parsley.
Drizzle with dressing.
Garnish with croutons and eggs.
