Brussels Sardine Sandwiches
|Hard boiled eggs||1 , finely chopped|
|Prepared mustard||2 Teaspoon (Dijon Type)|
|Lemon juice||3 Teaspoon|
|Grated onion||1 Teaspoon|
|Finely chopped parsley||2 Teaspoon|
|White bread slices||6 , crusts removed (Thin Slices)|
|Dill pickle/1/2 lemon sliced||1 , sliced|
Finely flake the sardines with a fork and combine with the egg, mustard, lemon juice, onion, parsley and 3 teaspoons oil from the sardine can.
Cut the pieces of bread in half diagonally and saute in the butter until golden brown on both sides.
Spread the sardine mixture on the slices of bread while they are still warm and garnish with halved, very thinly sliced pickle or lemon.
