Herbed Cheese And Watercress Sandwich
|1% fat cottage cheese||1 1⁄2 Cup (24 tbs)|
|Finely chopped pimientos||1⁄3 Cup (5.33 tbs), patted dry|
|Finely chopped seeded cucumber||1⁄3 Cup (5.33 tbs)|
|Green onion||1 , thinly sliced (Including Top, 2 Cups)|
|Snipped fresh dill/Minced fresh basil/parsley||2 Tablespoon|
|Grated lemon rind||1⁄2 Teaspoon|
|Black pepper||1⁄8 Teaspoon (To Taste)|
|Whole grain bread slices||8|
|Watercress||1 1⁄4 Bunch (125 gm), rinsed, patted dry, and coarse stems removed|
1 In a medium-size bowl, combine the cottage cheese, pimientos, cucumber, green onion, dill, lemon rind, and pepper.
Spread an equal amount of the mixture on 4 slices of the bread, then top with the watercress.
Place the remaining bread slices on top and cut in half.
