Ingredients
  1% fat cottage cheese 1 1⁄2 Cup (24 tbs)
  Finely chopped pimientos 1⁄3 Cup (5.33 tbs), patted dry
  Finely chopped seeded cucumber 1⁄3 Cup (5.33 tbs)
  Green onion 1 , thinly sliced (Including Top, 2 Cups)
  Snipped fresh dill/Minced fresh basil/parsley 2 Tablespoon
  Grated lemon rind 1⁄2 Teaspoon
  Black pepper 1⁄8 Teaspoon (To Taste)
  Whole grain bread slices 8
  Watercress 1 1⁄4 Bunch (125 gm), rinsed, patted dry, and coarse stems removed
Directions

1 In a medium-size bowl, combine the cottage cheese, pimientos, cucumber, green onion, dill, lemon rind, and pepper.
Spread an equal amount of the mixture on 4 slices of the bread, then top with the watercress.
Place the remaining bread slices on top and cut in half.
