Broiled Crab Sandwiches
|Fresh crab meat/2 cans (about 7 ounce each) crab meat||1 Pound (About 2 Cups)|
|Green onions||1 Bunch (100 gm), thinly sliced (Include Part Of Green Tops)|
|Lemon juice||3 Tablespoon|
|Chile sauce/Catsup||1⁄4 Cup (4 tbs)|
|Toast slices/8 english muffin halves||8 , lightly buttered|
|Eggs||2 , separated|
|Shredded mild cheddar cheese/Swiss cheese||1⁄3 Cup (5.33 tbs)|
Turn the crab meat into a bowl; pick over and discard any pieces of shell.
Add the onions, 2 tablespoons of the lemon juice, chile sauce or catsup, and 1 tablespoon of the mayonnaise.
Mix with a fork until blended.
Spread on the buttered toast or English muffins.
In another bowl, blend together the remaining 4 tablespoons mayonnaise and 1 tablespoon lemon juice; blend in egg yolks and cheese.
Beat egg whites until they hold firm peaks; fold into mayonnaise mixture.
Spread over sandwiches, covering crab filling.
Arrange sandwiches on broiler rack set about 5 inches below a preheated broiler; broil until browned, 3 to 4 minutes.
