Ginger Snap Sandwiches

Ingredients
  Mcintosh apple 1 , peeled and cored
  Low fat cottage cheese 1⁄2 Cup (8 tbs)
  Sugar 2 Tablespoon
  Gingersnaps 30
Directions

Shred apple in food processor or by hand with grater.
Place cottage cheese in food processor or blender; blend until smooth.
Add apple and sugar; blend until combined.
Spread apple filling onto flat sides of 15 gingersnaps; top each with another gingersnap to make a sandwich.
