Cheese-Topped Savouries

Ingredients
  Butter 1 Ounce (About 15 Gram)
  Streaky bacon rashers 2 , derinded and chopped
  Mushrooms 2 Ounce, sliced (About 50 Gram)
  Tomatoes 2 , skinned and chopped
  Made mustard 1⁄2 Teaspoon
  Bread slice 4 , buttered
  Cheddar cheese 2 Ounce, sliced (About 50 Gram)
  Parsley sprigs 2 (Used To Garnish)
  Salt To Taste
  Pepper To Taste
Directions

Melt the butter in a pan, add the bacon and fry until soft.
Add the mushrooms and tomatoes and cook for 1 minute.
Stir in the mustard and salt and pepper to taste.
Divide the mixture between 2 of the bread slices and top with the remaining 2 slices.
Toast both sides under a preheated hot grill until golden brown.
Place the cheese on top and return to the grill.
Cook until the cheese is golden and bubbling.
Garnish with parsley.
