Mozzarella Sprout Sandwich

Ingredients
  Cucumber 1 Cup (16 tbs), thinly sliced
  Carrot 1⁄2 Cup (8 tbs), shredded
  Green onions 2 , chopped
  Low calorie italian dressing 5 Teaspoon
  Skim mozzarella cheese 1⁄4 Cup (4 tbs), shredded
  English muffins 2
  Alfalfa sprouts 1⁄2 Cup (8 tbs)
Directions

1. Combine cucumber, carrot, green onions, and low-calorie Italian dressing.
2. Sprinkle 1 tablespoon mozzarella cheese on each English muffin half. Broil until melted.
3. Spoon 1/3 cup of vegetable mixture atop each half.
4. Add 2 tablespoons of sprouts.
