Mozzarella Sprout Sandwich
|Cucumber||1 Cup (16 tbs), thinly sliced|
|Carrot||1⁄2 Cup (8 tbs), shredded|
|Green onions||2 , chopped|
|Low calorie italian dressing||5 Teaspoon|
|Skim mozzarella cheese||1⁄4 Cup (4 tbs), shredded|
|Alfalfa sprouts||1⁄2 Cup (8 tbs)|
1. Combine cucumber, carrot, green onions, and low-calorie Italian dressing.
2. Sprinkle 1 tablespoon mozzarella cheese on each English muffin half. Broil until melted.
3. Spoon 1/3 cup of vegetable mixture atop each half.
4. Add 2 tablespoons of sprouts.
