Piquante Salmon Mold

Ingredients
  Gelatin 1 Tablespoon
  Cold water 1⁄4 Cup (4 tbs)
  Salt 1 1⁄2 Teaspoon
  Mustard 1 1⁄2 Teaspoon
  Cayenne 1 Teaspoon
  Egg yolks 2
  Milk 3⁄4 Cup (12 tbs)
  Melted butter 1 1⁄2 Tablespoon
  Lemon juice 4 Tablespoon
  Salmon 1 Cup (16 tbs), flaked
  Lettuce 4
Directions

MAKING
1.In a bowl, soften gelatin in cold water 5 minutes
2.In top of a double boiler, combine seasonings, egg yolks and milk and cook over hot water 6 to 8 minutes or until thickened, stirring constantly
3.Now add butter, lemon juice and gelatin, stirring until gelatin is dissolved
4.Remove from fire and fold in salmon
5.Turn into fish mold and chill until firm
6.Unmold on bed of crisp lettuce
SERVING
7.Serve with cucumber cream dressing
