I need to cook more, and I need to eat more fish! So here is my first attempt at cooking fish. All I did was take a fillet of salmon, put some butter on it (or in this case Smart Balance) and then sprinkle salt, pepper and bay leaves to taste and fry it in a pan with some EVOO. Very yum!
Extra virgin olive oil
2 Teaspoon (for frying)
1⁄2 Cup (8 tbs), cooked
1⁄2 , sliced
1 , chopped
Salt and pepper
1. Rub the fleshy side of salmon with salt and pepper.
2. In a large pan over medium heat, add oil and place the salmon with skin side down. Cook until the skin gets crispy and then turn and cook the other side.
3. Transfer the salmon to a serving plate and garnish with mushrooms, shallots and green pepper.
4. Serve the Salmon and Vegetable Delight with rice.
