Salmon With Arugula, Tomato And Caper Sauce
|Plum tomatoes||1 Pound, seeded and chopped|
|Lightly packed chopped fresh arugula/Basil / italian parsley||3⁄4 Cup (12 tbs), lightly packed|
|Olive oil||1⁄2 Cup (8 tbs)|
|Shallot||1 , chopped|
|Lemon juice||1 1⁄2 Tablespoon|
|Drained capers||1 Tablespoon|
|Salmon fillets||6 Ounce|
|Olive oil||1 Tablespoon|
Combine first 6 ingredients in medium bowl; season with salt and pepper.
Brush both sides of salmon with oil.
Season with salt and pepper.
Broil, without turning, until just cooked through, about 4 minutes.
Transfer salmon to plates.
Spoon tomato mixture over.
Garnish with lemon wedges.
