Grilled Salmon With Cucumber Relish
|Red onions||1⁄2 Cup (8 tbs), diced|
|White wine vinegar||1⁄2 Cup (8 tbs)|
|Shallots||2 , minced|
|Garlic||2 Clove (10 gm), minced|
|Minced ginger||1 Teaspoon|
|Grated orange rind||1 Teaspoon|
|Low sodium soy sauce||1⁄4 Teaspoon|
|Cucumbers||2 , thinly sliced|
|Ground black pepper||1⁄8 Teaspoon|
|Salmon fillets||24 Ounce|
|Olive oil||2 Teaspoon|
In a large nonstick skillet over medium high heat, combine the onions, vinegar, shallots, garlic, ginger, orange rind, and soy sauce.
Bring to a boil, stir and cook for 30 seconds.
Remove from the heat.
Add the cucumbers and pepper.
Set aside.Rub the salmon with the oil and grill or broil for 4 to 5 minutes per side.
Serve topped with the cucumber mixture.
