|Water||2 Cup (32 tbs)|
|White wine||2 Cup (32 tbs)|
|Onion||1 , sliced|
|Herbed mayonnaise||1 Cup (16 tbs)|
Combine all ingredients except salmon and mayonnaise.
Simmer 15 minutes.
Wrap fish in cheesecloth, and lower gently into simmering liquid.
Cook 7-8 minutes per pound; test for doneness with toothpick, if not cooked, return to broth a short time.
Let cool in liquid, and remove with aid of cheesecloth.
Serve with Herbed Mayonnaise.
