Champagne Poached Salmon

Ingredients
  Champagne 1 1⁄2 Liter (2 bottles)
  Fish stock/Water 5 Cup (80 tbs)
  Whole black peppercorns 2 Teaspoon
  Mustard seeds 2 Teaspoon
  Shallots 4 Medium, sliced
  Fresh dill leaves 6
  Lemon juice 1⁄4 Cup (4 tbs)
  Salt 4 Teaspoon
  Boneless salmon fillets 4 Ounce, skin removed (8 pieces)
  Salmon caviar 1 Teaspoon (for garnish)
For green apple slaw
  Green apples 2 , cored and cut into juliennes
  Red onion 1 Medium, sliced
  Sweet peppers 2 Medium, seeded and sliced
  Jalapeno peppers 2 , seeded and finely chopped (red / green variety)
  Finely chopped fresh dill 2 Tablespoon
  Olive oil 1⁄4 Cup (4 tbs)
  Lemon juice 2 Tablespoon
  Lime 2 , freshly juiced
  Salt To Taste
  Black pepper To Taste
Directions

MAKING
1. In a large sized skillet, combine all the ingredients apart from salmon. Mix well and bring to a boil.
2. Once boiled, reduce flame and simmer for 5 minutes.
3. Add salmon fillets, coat with poaching liquid and cover and cook for 12 to 15 minutes or till salmon is cooked.

FINALIZING
4. In a medium sized bowl, combine all the ingredients for green apple slaw and mix well.

SERVING
5 Place poached salmon on a presentation platter and serve topped with slaw, salmon caviar and fresh dill.
