Northwest Alder Planked Salmon

Ingredients
  Garlic 1 Tablespoon
  Canola oil 1 Tablespoon
  White wine 1⁄2 Cup (8 tbs)
  Lemon juice 2 Tablespoon
  Tomato 1 Medium, smoked, chopped
  Cream 1⁄4 Cup (4 tbs)
  Butter 8 Ounce, softened
  Freshly ground white pepper To Taste
  Boneless skinless salmon fillets 4 1⁄2 Pound
  Salmon fillets 4 1⁄2 Pound, boned and skinned
  Freshly ground pepper To Taste
  Smoked tomato butter sauce 1 Cup (16 tbs)
  Snipped chives 2 Teaspoon
  Roma tomato brunoise 1 Ounce
  Salt To Taste
  Chives 2 Teaspoon, snipped
  Brunoise roma tomato 1 Ounce, skinned
Directions

GETTING READ
1. Season the plank
2. Preheat the plank to 350°.
3. Prepare the smoked tomato butter sauce by gently heating a saucepan
4. Add the oil to the pan
5. Sauté the garlic in the pan till it is golden bowl
6. Carefully add the wine to the pan and then tip in the lemon juice
7. Add the tomato and simmer for five minutes
8. Add the cream
9. Cook till the mix reduces by half
10. Remove from heat
11. Add the butter to the sauce and mix till well incorporated
12. Set up a sieve on a bowl
13. Pass the sauce through the sieve. Press down on the tomatoes and the garlic to extract all the remaining juices
14. Set aside in a warm area till required

MAKING
15. Season the fish
16. Place the fish in the preheated plank for cooking
17. Bake for 15-30 minutes or till done

FINALIZING
18. Plate the fish with the sauce on the side on poured on top of the fish

SERVING
19. Garnish with the chives and roma tomato brunoise.
20. Serve immediately
