Ingredients
  Celery 1 Cup (16 tbs), finely chopped
  Green pepper 1⁄4 Cup (4 tbs), finely chopped
  Onion 2 Tablespoon, minced
  Canned salmon 1 Pound
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Mayonnaise 1⁄2 Cup (8 tbs)
  Bread slice 16
  Eggs 2 , slightly beaten
  Milk 1 Cup (16 tbs)
  Butter 1⁄4 Cup (4 tbs)
Directions

GETTING READY
1) Using a knife, chop the celery, onion and green pepper
2) Drain the canned salmon and using a fork, flake the fish and keep aside
3) Mix the vegetables and salmon with some seasonings, lemon juice and mayonnaise

MAKING
4) Make 8 sandwiches stuffed with the vegetables
5) In a shallow dish, mix the egg and milk
6) Dip to coat each sandwich
7) In a frying pan, heat some butter and fry the sandwiches till golden brown on each side

SERVING
8) Serve the toasts immediately
