Smoked Salmon And Potato Pudding
|Peeled cooked potatoes||18 Ounce, sliced (1 Pound 2 Ounce)|
|Diced onion||6 Ounce|
|Smoked salmon||9 Ounce, diced|
|Skim milk||2 Cup (32 tbs)|
|Eggs||3 Medium, slightly beaten|
|Eggs||3 Medium, hard cooked and sliced|
Line bottom of 1 1/2-quart casserole with half of the potatoes.
Add a layer of half the onion and half the smoked salmon.
In a bowl combine milk, beaten eggs, salt, and pepper.
Pour into casserole.
Bake at 375°F.
for 1 1/4 hours or until eggs are set.
Arrange slices of hard-cooked eggs on top.
