Grilled Salmon Skewers
|Salmon fillet||1 Pound, skinned|
|Soy sauce||1⁄4 Cup (4 tbs)|
|Liquid honey||1⁄4 Cup (4 tbs)|
|Rice vinegar||1 Tablespoon|
|Minced ginger root||1 Teaspoon|
|Garlic||1 Clove (5 gm), minced|
Slice salmon lengthwise into 12 long strips; thread each onto soaked wooden skewer.
Place in shallow dish.
Whisk together soy sauce, honey, vinegar, ginger, garlic and pepper; pour over skewers, turning to coat well.
Let stand at room temperature for 30 minutes.
Reserving marinade, thread 1 lemon wedge (if using) onto end of each skewer.
Place on greased grill over medium-high heat.
Cook, brushing often with marinade, for 4 minutes; turn and cook for 3 to 4 minutes or until fish flakes easily when tested with fork.
