Salmon Filled Avocados
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Lemon juice||2 Teaspoon|
|Flaked salmon||1 1⁄2 Cup (24 tbs)|
|Hard-boiled eggs||2 , chopped|
|Shredded mild cheddar cheese||1⁄2 Cup (8 tbs)|
|Avocados||2 Large, halved and seeded|
|Lemon juice||2 Tablespoon|
|Soft bread crumbs||1⁄3 Cup (5.33 tbs)|
|Melted butter||1 Teaspoon|
Mix mayonnaise with water and 2 tablespoons lemon juice; heat.
Add salmon, capers, eggs and cheese; heat through.
Brush avocados with lemon juice and fill with salmon mixture.
Combine bread crumbs and melted butter; sprinkle over filled avocado halves.
Place under broiler until crumbs are lightly browned.
